I have Studio One 2 Producer but am interested in upgrading to the Professional version as there is a ½ off sale. The PreSonus web site says:” Professional gives you a 64-bit double-precision audio engine for superior sound quality”.
The Producer version has 32-bit Audio-processing resolution. (Not sure what that means)
Will I really notice a difference in sound quality over the Producer version?

Go for it.
It only goes on that big of a discount once in a while.
The 64 bit engine will give you more head room for mixes but you most likely will not hear a difference.
The biggies are:
1) The built in integrated Mastering Application.
2) Video sync support.
3) An included non trial version of Melodyne ( entry level)

I do have the full version of Melodyne, so I will need to decide if the Mastering Application is worth $100.

Yes if you don't use video.
There are other (light) mastering solutions for about that price but you have to look at the integration/workflow value and whether or not you do the mastering step.
Many videos on the internet covering S1's mastering application.

Yeah the mastering application would be nice as I have a hard time getting my mix levels as loud as pro mixes.
The Groove Delay in the Pro version looks nice too.

Just to add, Multiband Compressor is a nice plug, as is Open Air. Both are only available in Pro.

No, you won't. But as others have pointed out, that's not the best reason for upgrading.
