Pro Tools standard

Hi,
Pro Tools (standard) (vanilla) or just simply Pro Tools allows for 32 I/O - Is it possible to choose specifically which inputs and outputs are to be used?
I haven't got my Quantum set up yet (no rush) but I've got one!
So lets say there is a Quantum 2632 connected with a 4848 or two Quantum 2632's naturally this will exceed the 32 I/O of Pro Tools standard - Which is why I ask if it is possible to "choose" the specific 32 input & 32 output channels? - Thanks
