We use GEQ and Fat Channel via SMAART for mixing the band live and it's very effective. Iusually run SMAART once in every room across the FOH and monitors, then we old school the GEQ - using the lead vocal mic in front of the speakers and identifying trouble spots. I have used SMAART in my studio on an RM16A on the Main outputs. I've watched the YouTube videos on GEQ analysis but how would you best achieve this in a control room? What sound source would you use?

I don't think you need to worry about "ringing out" the monitors in a control room (studio mix room) because you wouldn't have any live microphones in there. So I'd leave the GEQ's flat/off for those speakers.
