What are the chances that we will see a studiolive mixer that uses usb-c or thunderbolt instead of USB 2.0 in the future?

Also note that TB/TB2 ports on a Mac accept the Apple Thunderbolt to Gigabit Ethernet Adapter. And that Ethernet adapter then allows you to connect to AVB devices, like the Series III mixers. So what you're waiting for may already be available
