iOS 10.6.8 is (according to release notes) not supported for capture 2.1? Will it run anyway?
Will capture 2.0.1 (our actual version) also work for RM32 mixers?

Will it "work" and is it supported are two different questions.

On Capture 2.0.1, I'm not 100% sure it'll work. I think you need a later version of Capture to use all the AI features like storing mix scenes. Was that 2.1? I can't remember.

Just found it. New in Capture 2.1:

Saves a StudioLive™ AI-series mixer scene with the Capture Session
Open a Capture Session with a StudioLive AI mix scene in Studio One® 2.6, and the scene loads in the Studio One mixer, complete with Fat Channel, fader values, bus sends, mutes, markers, and audio edits
Channel and bus names shared across the network among Capture, VSL-AI, SL Remote-AI, and the StudioLive AI-series mixers
Remote control over mixer digital returns (analog input or digital playback) on StudioLive AI-series mixers
Remote control over channel linking on StudioLive AI-series mixers
