I want to hide stems of the notes when displaying only guitar tab. It looks cluttered and makes the score hard to read.
While I am showing staff and tab there are no stems on the tab. When I show tab only stems appear. When I select the option of hiding them it doesn’t work. I must be doing something wrong.

I don't see a way to do this on iOS if you are looking at tablature only. If you make the part display traditional notation and tablature, the stems disappear for me on the tablature. I also see where you are selecting "hide stems" under "notes" in the "More..." area of the selection menu. As you mentioned, that doesn't change anything, either.

I'd send a message to Notion directly and perhaps report this as a bug.

Thanks. Yes with tablature and staff there are no stems in the tablature. Also (out of interest only) I noticed when I select hide stems in the staff this doesn’t work if the notes are beamed.
