Is there a way to better organize scores using Folders or something? I've got a couple hundred scores for multiple projects that are impossible to sort through

I agree. This is a great tool for a music teacher and I have ended up with a ton of different exercises, examples and songs for students and it would be awesome to have options for different categories and the like.
