VST Plug-ins Won't Show Up? (Including Soundtoys and Native Instruments)

For some reason my VST plug-ins aren't showing besides a few inside of Studio One. I'm suddenly missing almost all of my plug-ins inside of Studio One when I'm in a session. It told me devices are missing in a recent session I pulled up. Not sure why I'm having this problem... The only thing I can think of is I updated my M1 Mac mini and updated Studio One 5 to the latest version. Would that cause issues? Also, Studio One is only accepting Audio Units now for me to see certain plug-ins that I could see before and use as VST plug-ins. What is this? I want VSTs back.

You got the M1 situation going on.
Putting that aside, you should check the normal stuff first:
On Windows I've had to restart the software and even restart the computer to reset things sometimes.
Don't know if you're including power cycle as one of your troubleshooting tasks.
I usually have the plugin scan turned off and only turn it on when I have a plugin to add.
Lot of rebooting usually. If I don't see it at this point I check licenses and iLok and such.
As well as paths.

@Tacman7 Thank you for the reply. I tried restarting Studio One and restarting my Mac and I continue to open my session to find missing devices. Omnisphere and like one other plug-in show up in the instruments, but most of my plug-ins are suddenly missing. For the most part, I can only access PreSonus plug-ins. I checked my paths for VST plug-ins and I have it routed to the right location in Studio One. This is quite confusing.

Yes, your plug-ins don't show up because they are not ready for running on an M1 in native mode yet. AU plug-ins are available because MacOS runs them in Rosetta mode under the hood. Omnisphere is available because it's already M1-ready.
Two options to get your VST plug-ins back:
a) Go to the website of the plug-in developers and check if they already provide a M1 native version of the plug-in(s).
b) Run Studio One in Rosetta mode
